Meals for Vegan kids?Any ideas for fussy 3 yr old who consumes mostly soy & processed foods.?

Calling all Vegan Moms & Dads! (And anyone with Vegie kids!)

My son is a healthy 3 year old Vegan. He never gets those runny nose colds so common of his age which is awesome and I am sure that this is good for hi :) However, I am concerned that now with him getting older that he really needs to be eating more. He is actually a little on the bigger side for his age (not overweight but very tall and solid/muscular), but this is not because of his solid food intake but I think mostly because he gets a lot of calories from soy milks and other types of milk like rice and oat. He also eats a lot of processed vegie sausages and other meat alternatives and snacks.

I really need to find ways to get him to eat more vegies and things that are mixed together (which he is a bit funny about), like lasagne or a plate with a few different vegies on it (rather than just peas, or just lentils for eg).

What ideas or tips and tricks do you have to share with this frazzled vegan mom? I just feel stuck.

Thank you!!

Oh note that although I use the term Mom, it is just a preference-Im not in the US, but in Australia. So we don’t have as much choice with Vegan friendly foods/substitutes here unfortunately. Although some things are imported (like cheezley :)
Vegans don’t consume dairy or egg. Some people think Vegan means Vegetarian but there’s a big difference lifestyle-wise.

How do make my kids meals more nutritious ( and have them eat it too)?

I need tips to add more healthy stuff on their dieats. I’m not looking ” they eat what you serve when they get hungry” responses because I have no intentions of doing that. I would just like to add some variety and veggies etc in their diets.
my middle one is pretty picky, other two are ok.. I do not enjoy cooking or looking for new recipies so if you could give me some quick and easy things you do with your kids to get them eat more healthy stuff ( or even good website links) snacks or actual meals. ( I can cook, but I dont want to spend two hours in the kitchen with 50 incredients to make one dinner..)
Thanks
its funny I actually watched the supersize me movie today and thats what made me think about our eating more. I mean we do eat fairly well but theres always room for improvement :)

Cool, arent they?

Is there any fast food places and/or restaurants that serve healthy kids meals my 18 mo can eat when we are on?

the go? We run errands a couple times a week and we usually get chik-fil-a nuggets and fruit cup. Is there any other places we can get a quick kids meal that is somewhat healthy when we are out and about?

Where can I find ideas / recipes for easy healthy meals that kids like to eat?

My 4 year old hasn’t developed very good eating habits. It’s our fault and we know it. We want to do better.

Is there a book or some other source of easy to fix foods that are reasonably healthy and that kids like to eat? Preferably something that you’ve used yourself and have found effective.
